
An espeto is six fresh sardines threaded onto a bamboo skewer and grilled over olive-wood embers in an old fishing boat filled with sand. It is the dish that defines the Málaga coast.
The best chiringuitos are in Pedregalejo and El Palo: El Tintero (waiters shout the dishes and you grab what passes), Casa Pedro, El Cabra. Closer to the centre try Chiringuito Andrés Maricuchi in La Malagueta.
Order espetos, ensalada malagueña, boquerones fritos and a cold Victoria beer. Lunch only — most chiringuitos are at their best from 13:30.
